1. It's not a writer's mistake or anything, Aerith really was named ten days after her birth. Because infant mortality used to be much higher, some cultures have had the custom of waiting to name the baby until it seemed likely they would live. My thought is that this is from Ifalna's background: Ancients seeing birth as a gift of life from the planet, and the death of young ones as the reclamation of a gift the Planet wasn't ready to grant. So it was customary to hold off from fully "claiming" the child as their own until they survived a certain period of time.
1b. ...But Gast totally knew that his baby was a girl ten days after birth. I'm chalking that up to translation error and guessing his line was supposed to be "Since it's a girl", not "If it's a girl".

2. Gast is fully aware Aerith sounds like "earth". It's part of the reason he decided on that name.

3. Gast hails from one of the eight towns that became Midgar sectors; I personally like the thought of him coming from the area of sector 4 or 5 and having attended the church that Aerith grows her flowers in.
